Matt Simon was called “One of the smartest players I ever coached,” by former Greyhound Football Coach Jack Scott. After joining the Hounds as a walk on, he eventually earned a full scholarship. Simon was a four-year starter at inside linebacker for ENMU from 1972-75, before starting his coaching career. He began his coaching career at Portales High School before returning to ENMU as an assistant. He also coached at Borger High School, University of Texas-El Paso, University of Washington, and University of New Mexico.
